Crispy Corn Tortillas with a Cheesy Potato Filling


Hey guys,

I don't know how of why this recipe happened, but it did, and now I'm absolutely in love with these yummy things. They are cheesy, crispy and potato-y. What else could you ask for? They also have a little kick from bottled enchilada sauce. Delicious! Honestly, I cant stop eating them. They are just too good. My mouth is watering just thinking about them. So, get up and go make yourself a batch of these yummy things. The recipe makes 4 servings.

Crispy corn tortillas with a cheesy potato filling:

Ingredients:
1 potato (cubed)
1/3 cup cheese (any kind you please)
1/3 cup bottled enchilada sauce
salt and pepper to taste
4 corn tortillas
handful of cilantro (chopped)
1/3 cup black beans (cooked)

Method:
Mix all ingredients except tortillas together in a bowl. Place some filling in a tortilla and fold it over like a taco. Repeat until all tortillas are filled. Place on a baking sheet and bake in 350* oven for about 10-15 min or until tortillas are crisp and cheese has melted.
There you go! Easy, peasy, lemon squeezy.
