These lemon bars have plenty of personality and they're healthified! Check them out:
Mmmmmm....Perfect.

Healthy lemon bars:
Adapted from 1,001 cupcakes, cookies and other tempting treats.

1/2 cup soy milk
2 drops lemon oil (optional)

Syrup:
1 cup confectioners sugar
1/4 cup lemon juice
Pinch lemon zest

Method:
Beat yogurt, oil and eggs with sugar until fluffy. Stir in lemon oil and zest. Sift in the flour and fold it in. Stir in the milk. Spoon into parchment lined pan and bake in 350* oven for 45-50 minutes.
To make syrup:
Stir together the juice and sugar until dissolved.
Prick the baked cake with a fork and pour the hot syrup over. Wait until the cake has cooled and the syrup is absorbed.
