Vanilla Cashew Butter Cookies

Hi friends!

I officially have a new obsession! Dun..dun...dun....
But it's a good obsession. A yummy obsession.
Can you guess what that obsession is?
Cashew butter!
Yes! I looove it, which is quite bizarre.
Why? Because I HATE cashews.
Plot twist. ;)
I don't know why, but cashew butter tastes so much better than plain old cashews.
Especially in these cookies!
 
Vanilla cashew butter cookies:
 
1 cup creamy, unsalted cashew butter
3/4 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten vigorously
1 tablespoon vanilla extract
2 tablespoons greek yogurt
 

Whisk together sugar, baking soda, and salt. Add cashew butter, egg, vanilla and yogurt. Preheat oven to 350*. Line baking sheets with foil or parchment and roll dough into small balls. Flatten on baking sheet and bake for 12-14 minutes.

These cookies are great warm with a glass of milk. They will stay soft for a couple of days, if stored in a plastic container. Of course, they probably won't last you that long!
