Fall Harvest Black Bean Soup

Hi fellow food lovers!



 
I really didn't know what to call this soup. It's kinda like a mix of chili and soup. It has corn, black beans, mushrooms and zucchini.
And guess what? 
I'm finally ready to embrace Fall. I haven't broken out the pumpkin yet, but I'm getting into the fall spirit a little bit more.
Just this week, I overhead someone in my class saying that they had already picked out their Christmas tree.
I know, right? How crazy is that?
























This soup is another great transition dish. It's a one pot meal that's easy to make and eat. It makes tons and it's great for reheating for lunch the next day. I took this for lunch today and it tasted even better than last night.
It freezes well too. It's like a dream Fall meal!

  1. This is such a perfect soup for fall! The zucchini makes it a perfect "transition" soup. I love Christmas, but wow I can't believe someone has their tree already- that's crazy!
